A delicious way to use those overripe bananas. Makes two 7-1/2 x 3-1/2 loaves
Preheat oven to 350ºF and grease the bottom and sides of 2 7 ½ x 3 ½ in bread pans.
Scramble the egg in a large mixing bowl. Add the bananas and mash together. Melt the butter and add to the banana mix and combine. Sift together the rest of the dry ingredients and combine.
Pour into bread pans and bake for 40–45 minutes, or until a toothpick inserted into the center of the bread comes out clean. Allow to cool in pans for about 5 minutes and then transfer to wire racks.
