This is the banana bread I grew up eating. The recipe is quick and easy, perfect to whip up and take to the office. It is wonderful warm out of the oven with a little butter and a cup of coffee, or right of the pan the next day when the top of this bread becomes sticky and so yummy. Hope you enjoy!
Preheat oven to 350ºF. In a large bowl, cream together butter and sugar. Mix in mashed bananas and eggs. Stir in flour, baking soda and salt until just mixed. Spread batter in a 13×9 inch pan. Bake for 45-60 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
This recipe has always worked perfectly for me at 45 minutes in several different ovens, although my mom swears it takes her 60 minutes, so be sure to check it often to find the baking time that works best for you.
