This is the recipe my mom always used. I have never had a moister, tastier banana bread than this.
Preheat the oven to 350° F. Spray a large loaf pan with non-stick cooking spray.
In a mixing bowl, combine the flour, baking powder, baking soda and salt. Set aside.
In another, large bowl, cream the shortening and sugar together. Beat in the eggs. Add the mashed bananas and mix well.
Stir the dry ingredients into the wet ingredients, mixing until blended.
Pour the batter into the prepared loaf pan, leaving the center slightly hollow. Let the batter stand for 20 minutes.
Bake for 60–70 minutes, or until a toothpick inserted comes out clean.
