Description

My mother used to make this banana bread any time she had a few bananas left over that had turned brown. It works well if they’re really dark brown (but not moldy with white spots). I like to mix it up with different morsels–peanut butter morsels are yummy!

Ingredients

  • 3 whole Ripe Bananas, Well Mashed
  • 1 whole Egg Well Beaten
  • 1-½ cup All-purpose Flour
  • 1 cup Sugar
  • 1 pinch Salt
  • 1 teaspoon Baking Soda
  • ½ cups Chocolate Chips (or Nuts Or Other Morsels)

Preparation

Preheat oven to 350F.

Grease loaf pan.

Mix bananas and egg together in a large bowl. Stir in flour, sugar, salt and baking soda. Add chips and mix by hand.
Pour into pan and bake for 1 hour. Remove from pan and cool on rack.

Serve warm. Enjoy!

This is in my oven now, and my house smells of amazing, sweet, bananas. I made a triple batch, just because of how many bananas I had, and can’t wait to make this again.

This is moist and Yummy! I used mini choc chips and made in mini loaf pans. I am delivering it a few ladies I visit from church in a few hours! Thanks so much!

The recipe was so easy and came out fantastic. I’ll probably cut the sugar a bit next time–it turned out slightly too sweet.

I’ve tried numerous banana bread recipes, and now I’ve found my favorite! Very flavorful (I personally like to add a little vanilla, cinnamon and nutmeg) and moist. My favorite thing about this recipe, besides its simplicity, is that it doesn’t call for any butter or oil, and that it doesn’t compromise the texture/flavor, at least not to me. I don’t feel as guilty having that second slice. :) Tastes great with chocolate chips and/or walnuts.
