This is a SUPER easy recipe for banana bread. It comes out REALLY moist and not very sweet at all. It makes one large loaf or two smaller loaves.
Combine the sugar and the shortening. Then add the eggs; next the bananas.
Combine the dry ingredients in a separate bowl and mix them together. Mix them into the wet ingredients. This batter looks VERY wet. You will think you are missing a cup of flour at the least. You aren’t. It’s fine.
Bake for 1 hour at 350° if making one large loaf. It will likely only be 40-45 minutes if making two small loaves, which is what I like to do. Do the toothpick test and enjoy!
