Banana muffins with a healthy touch!
Preheat the oven to 375°F. Line a muffin pan with paper tins.
In a bowl, combine the flour, oat bran, wheat germ, salt, baking powder and baking soda. Set aside.
In another bowl, cream the butter and the sugar. Mix in the egg, then stir in buttermilk and the mashed bananas. Mix well to combine.
Incorporate the dry ingredients. Do not over mix the batter. Fold in the chocolate chips.
Scoop the batter into the prepared muffin pan. Bake 20-25 minutes or until a toothpick inserted in the middle comes out clean.
