Ingredients

  • FOR THE BREAD:
  • 1 cup White Flour
  • 1 cup Wheat Flour
  • ½ cups Sugar
  • 3 Tablespoons Ground Flax
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • ½ teaspoons Each Cinnamon And Nutmeg
  • 2 whole Eggs
  • 1-½ cup Applesauce (unsweetened)
  • 3 Tablespoons Vegetable Oil
  • 3 Tablespoons Honey
  • ⅔ cups Raisins
  • _____
  • FOR THE STREUSEL (optional):
  • 3 Tablespoons Butter, Cold
  • ¼ cups Brown Sugar
  • ¼ cups Quick Oats
  • 2 Tablespoons Flour

Preparation

Preheat oven to 350ºF. Grease a loaf pan.

For the bread, combine dry ingredients in a large mixing bowl. Combine wet ingredients in a small mixing bowl and add to the dry mixture. Stir until just combined and add raisins. Pour batter into the pan and bake for 1 hour.

If adding streusel topping, put still cold butter, sugar, oats and flour into a small bowl and mix with a fork or pastry cutter until it is crumbly and combined. Bake the bread for about 20 minutes and then pour streusel on top of the loaf. Continue baking for about 40 minutes.
