Description

Fall’s finest ingredients are used to make these airy and delicious muffins filled with apples, pecans, cloves and cinnamon and topped with brown sugar and more cinnamon!

Ingredients

  • FOR THE MUFFINS:
  • 2 cups Minus 4 Tablespoons White Whole Wheat Or Unbleached All Purpose Flour
  • ½ cups Whole Wheat Flour
  • 12 Tablespoons Natural Cane Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Ground Cloves
  • 1 teaspoon Cinnamon
  • ½ teaspoons Sea Salt
  • ½ cups Soymilk Or Milk
  • ½ cups Applesauce
  • 2 whole Eggs, Beaten
  • 4 Tablespoons Unsalted Butter, melted
  • 1 teaspoon Vanilla Extract
  • 2 cups Peeled, Cored And Finely Chopped Apples

  • FOR THE STREUSEL TOPPING:
  • ½ cups Chopped Pecans
  • 6 Tablespoons Brown Sugar
  • 1 teaspoon Ground Cinnamon

Preparation

1. Preheat oven to 350 degrees F. In a mixing bowl, combine flours, sugar, baking soda, baking powder, cloves, cinnamon and sea salt.

2.In a small bowl combine the milk, applesauce, eggs, butter and vanilla. Whisk to combine.

3.Add the wet ingredients to the dry ingredients and mix just until incorporated. Fold in the apples.

4.Spoon the batter into the muffin cups (this recipe makes 18 standard muffins), filling a little over halfway.

5. Combine the streusel ingredients. Sprinkle streusel evenly over the batter.

6.Bake at 350 degrees for 20 minutes, or until the muffins spring lightly back when they are lightly touched. Remove them from the pans immediately and allow to cool on a wire rack, or serve while warm.
