Incredibly moist apple muffins with a sprinkle of brown sugar for a sweet crunch. These are my most popular recipe on my blog.
Preheat oven to 350ºF and line a muffin pan with paper liners.
Cream together sugar, eggs, oil, and vanilla until light and fluffy. Sift flour, baking soda, salt, and ground cinnamon into a bowl. Add dry ingredients to the creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.
Fill paper liners almost to the top, about 3/4 full. Sprinkle with brown sugar.
Bake at 350ºF for 20–24 minutes. Makes 18 muffins.

These are SO good! I made the mistake of putting in way too many apples (trying to use up what I had on my counter) and they didnt set up very well, but otherwise, YUM!
