Description

A rustic and delicious fall recipe for anyone who has a fruit bowl brimming with beautiful apples this time of year.

Ingredients

  • FOR THE MUFFINS:
  • 1 cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Nutmeg
  • ½ teaspoons Salt
  • ½ cups Butter, At Room Temperature
  • ½ cups Granulated Sugar
  • ½ cups Light Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Finely Chopped Apples
  • _____
  • FOR THE STREUSEL TOPPING:
  • ⅓ cups Light Brown Sugar
  • 1 Tablespoon Whole Wheat Flour
  • ⅛ teaspoons Ground Cinnamon
  • ⅛ teaspoons Nutmeg
  • 1 Tablespoon Cold Butter

Preparation

- Preheat oven to 375 degrees (F) and line 12 muffin tins with paper liners.
– In a medium bowl, whisk together flours, baking powder, baking soda, nutmeg, and salt.
– In the bowl of an electric mixture on medium speed, beat together butter, sugars, and eggs until light and fluffy. Reduce speed and mix in vanilla.
– With a spatula, stir in apples and then gradually fold the wet mix into the flour mixture.
– Divide the batter among the liners.
– For the streusel, mix together brown sugar, flour, cinnamon, and nutmeg in a small bowl. Using a pastry cutter or 2 forks, cut the butter into the mixture until it is the consistency of bread crumbs. Sprinkle over the muffin batter.
– Bake for 20 minutes, or until cake tester comes out clean.
– Once done, allow to cool 5 minutes in the pan, then complete cooling on a wire rack.

These were wonderful! My 2 year old LOVES them. I doubled the batch to freeze some. I left off the streusel topping and added in 2 grated carrots to half the batch. They are SO good! Thank you for posting! (Also, I grated the apples-peel and all- to add a bit more nutrients for my son)

These were fabulous, and quite simple to put together.

I used two cups of apples, mainly because I was chop-happy and had them ready. I did chop them very finely, and it did not negatively affect the consistency of the muffin at all. I also added a quarter teaspoon of cinnamon to the batter.

Also, I did not add the butter to the streusel mix. I personally have better results if I sprinkle the dry ingredients and then dot with butter. That’s just personal preference.
