Description

Full of cozy fall flavors, these Apple Cinnamon Muffins will warm your taste buds and delight your senses with cinnamon aroma.

Ingredients

  • FOR THE MUFFINS:
  • 2 cups All-purpose Flour
  • ½ cups White Sugar
  • ¼ cups Brown Sugar
  • 2 teaspoons Baking Powder
  • 3 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 1  Egg
  • 1 cup Milk
  • ½ cups Unsweetened Applesauce
  • 2-½ teaspoons Vanilla Extract
  • 1-½ cup Diced Apples
  • FOR THE TOPPING:
  • ½ cups Brown Sugar
  • ½ cups All-purpose Flour
  • 1 teaspoon Cinnamon
  • 4 Tablespoons Butter, Melted

Preparation

Preheat oven to 350 F. Lightly grease 18 cups in standard size muffin tins with non-stick cooking spray. Set aside.

In a large bowl, combine the flour, white sugar, brown sugar, baking powder, cinnamon, nutmeg and salt.

In a medium sized bowl using a hand mixer or in a stand mixer with fitted paddle attachment, combine the egg, milk, applesauce, and vanilla. Slowly incorporate the wet ingredients into the dry ingredients and mix until just blended. Gently fold in diced apples.

Spoon batter into prepared muffin tins, filling each cup about 3/4 full.

To make the crumb topping, combine the brown sugar, flour, cinnamon and butter in a small bowl. Sprinkle it over the tops of the muffins.

Bake in preheated oven for 12-16 minutes, or until tops of muffins are set and golden brown. Remove from oven and let them cool. Enjoy!
