If regular ol’ banana bread doesn’t really float your boat, try this healthy version flavored with cinnamon, studded with apple chunks, and moistened with yogurt instead of oil. Healthy and yummy? Believe it.
Preheat oven to 350 degrees F and grease a 9″x5″ loaf pan.
In a medium mixing bowl, mix together first five ingredients (dry ingredients).
In a large bowl, stir together remaining ingredients until well blended. Slowly mix dry ingredients into wet ingredients, stirring until just combined. Do not overmix!
Pour batter (it will be very thick, but should be evenly moist like thick brownie batter – not doughy like bread dough) into prepared pan and place onto middle rack of preheated oven. Bake approximately 40-50 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then carefully invert loaf onto a wire rack (run a knife around between the pan and the bread to loosen). Cool completely before slicing.
Cooled loaf can be tightly wrapped in plastic and foil and frozen for a couple of months.

I’m going to hold off on the review. My loaf turned out flat – it didn’t rise and it didn’t look nearly as yummy as yours does. It was very thick – not bread like at all. I’ll try it once more later down the road and hopefully it’ll turn out right. I’ve never had that happen before.

I think my bread pan is bigger – maybe it’s a meatloaf pan LOL well anyway I made just one loaf with this recipe. It smells really good. Can’t wait for it to finish cooling. Oh we had vanilla not plain yogurt so I omitted the vanilla extract. I’ll let you know how it works.
