Description

A wholewheat apple muffin that is perfect for the school lunchbox. Healthy, but the kids still like them. Can be frozen too.

Ingredients

  • 2 cups Wholemeal Or Whole Wheat Self Raising Flour
  • ½ cups Almond Meal (ground Almonds)
  • ½ cups Sugar
  • 2 teaspoons Ground Cinnamon
  • ⅓ cups Olive Oil
  • 1 cup Milk
  • 2 whole Eggs
  • ½ cups Applesauce
  • 2 whole Red Apples, Cored And Finely Sliced

Preparation

Set out paper cases in muffin tin.

Preheat oven to 180C (350F).

Mix the dry ingredients together.

Add the wet ingredients and mix until just combined.

Put 1/4 cup of batter into each paper muffin case.

Push a couple of apple slices into the batter.

Sprinkle with demerara sugar if you want.

Bake for 20 minutes.

Can be frozen. I pop them into the kids’ lunchboxes still frozen and they are thawed by snack time.

I just made these and they’re very good! They will make a wonderful, healthy on-the-go breakfast or snack in the car. I didn’t have almond meal so I just ground up whole almonds in my food processor — I’m not sure if this makes a difference in flavor, but they taste great to me!
