A versatile muffin for just about any occasion.
Preheat oven to 400 degrees. Place paper liners in a muffin pan or grease and flour muffin cups. In a large bowl, combine the oil, egg, milk, sugar (I use 1/2 cup for more dessert type muffins and 1/4 cup for more dinner type muffins) and salt. Mix it very well with a fork or wire whisk. Add the baking powder and flour. Mix until the dough is moistened, about 20 to 30 strokes. Do not over-mix! Spoon the batter into the prepared pan and top with sugar or cheese or whatever your little heart desires that day. Bake for 20 minutes. Remove from the oven and cool slightly before removing from the pan. Cool completely on a wire rack.

These look delicious!! I’m thinking a raspberry and cream cheese combo!
