Description

Get to work and have your muffins too. Muffins made in 3 minutes in the microwave!

Ingredients

  • ½ cups Plus 6 Tablespoons White Whole Wheat Flour
  • 2-½ Tablespoons Sugar
  • 1 dash Salt
  • 1 teaspoon Baking Powder
  • 1 whole Egg (or 1 Tablespoon Flax Seed Meal Mixed With 3 Tablespoons Water)
  • 6 Tablespoons Vanilla Yogurt
  • 2 Tablespoons Milk (whatever You Have On Hand)
  • 2 Tablespoons Vegetable Oil
  • 1 dash Vanilla
  • ½ cups Any Mix-ins: Blueberries, Cranberries, Chocolate Chips, Etc
  • 1 Tablespoon Brown Sugar, For Sprinkling

Preparation

In a small bowl, mix flour, sugar, salt and baking powder. Add egg (or flax egg substitute), yogurt, milk, oil and a dash of vanilla and mix until combined. If batter still seems a little thick, add a little more milk.

Fold in mix-ins of your choice.

Distribute batter evenly among mugs or small ramekins a little more than halfway to the top. Optional: sprinkle brown sugar over top before microwaving.

Place in the microwave on high for 3 minutes.

This is absolutely amazing!!
Quite yummy as well!! xD
I add dried cranberries to my mixture.
And also added about 2 Tbsp. milk since I though my mixture was a little dry.
It came out perfectly cooked. ;)
