A light and healthy fresh salsa made with juicy watermelon, tomato, red onion, jalapenos and cilantro.
1. Place the red onion in a small bowl and cover with cold water. Let it sit for a few minutes to lessen the strong flavour. Drain.
2. Into a medium-sized bowl, add the onion, tomatoes, watermelon, cilantro and lime juice; season with salt and pepper. Refrigerate for about 30 minutes to let the flavours meld before serving, if desired.
