Description

My mom made these all of the time when I was growing up. If I brought them to school, kids always dared me to drink the vinegar. Of course I would do this, because for some reason I really, really love vinegar … and it’s good for you too! A light side dish or snack.

Ingredients

  • 1 whole Cucumber
  • 3 cups White Or Apple Cider Vinegar (or Enough To Cover Your Cucumbers By 1/2 An Inch)
  • 1 Tablespoon Sugar, To Taste
  • 1 teaspoon Black Pepper To Taste

Preparation

OK, these are super easy and super yummy!

Wash and peel your cucumber. Slice your cucumber in medallions (rounds). Set aside.

In a medium-sized sealable container, pour in vinegar. Mix in sugar. The point is to cut the acidity, but not too much. You do not want these to be sweet. If you need more sugar, add more.

Add pepper. If you love pepper, add as much as you would like. Just make sure you taste as you go. If you do not like pepper, you may reduce or leave out completely. Give it a good stir. Sugar should be dissolved.

Add cucumber, put the lid on and refrigerate for at least an hour. I like when they sit overnight, they become extra vinegar-y and deliciously cold!

(Sometimes I add carrots for fun!)

My roommate and I eat this all the time, except we leave out the sugar and add onions. We also add other seasonings. The sugar tends too make the cucumbers limp, but splenda does not.
