Description

Perfect for breakfast, an afternoon snack or dessert! Oats, blueberries, chia and cinnamon team up for a tasty nutritious sweet.

Ingredients

  • 2 cups Regular Rolled Oats
  • 1-¼ cup Oat Flour (grind Up Oats To Make Flour If You Don't Have It On Hand)
  • 1 teaspoon Cinnamon
  • 2 Tablespoons Chia Seeds Or Ground Flax
  • ½ cups Packed Brown Sugar
  • ½ teaspoons Kosher Salt
  • ⅓ cups Chopped Almonds
  • 4 whole Dates, Pitted And Chopped Into Bite Size Pieces
  • ¼ cups Coconut Oil
  • 1 Tablespoon Almond Butter
  • ¼ cups Brown Rice Syrup
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Almond Extract
  • 1 cup Fresh Blueberries

Preparation

Line an 8″ x 8″ metal baking pan with parchment paper allowing the paper to hang over the edges (you’ll use the paper as a handle to remove cooked bars from pan). Preheat oven to 350 F.

In a large bowl, whisk together all of the dry ingredients (oats through salt), nuts and dates.

In a separate bowl, whisk together the wet ingredients (oil through extracts). Add wet ingredients into the dry and stir well until thoroughly combined. Fold in the blueberries and spoon the mixture into your baking pan. With wet hands (to prevent sticking), press mixture evenly into the pan. Press firmly to create a nice tight bar texture.

Bake for about 30 minutes. Remove from oven. Allow to cool completely before removing from pan and cutting. These are best eaten immediately. Otherwise cut them into bars and refrigerate or freeze.

Notes:
1. Pop leftovers back in the oven for a few minutes to crisp them up again the next day.
