Description

Versatile – and delicious -granola mix.

Ingredients

  • 5 cups Rolled Oats
  • 1 cup Sunflower Seeds
  • 1 cup Coconut
  • 1 cup Pepitas
  • ¾ cups Sliced Almonds
  • ¾ cups Walnuts Or Pecans, Or Both
  • ½ cups Wheat Germ
  • ¼ cups Sesame Seeds
  • 2 Tablespoons Ground Flax Seed (optional)
  • ¾ cups Water
  • ¼ cups Vegetable Oil
  • ¼ cups Honey
  • ¼ cups Molasses
  • 2 teaspoons Cinnamon, Ground
  • ¾ teaspoons Salt
  • 1-½ teaspoon Pure Vanilla Extract

Preparation

Pre-heat oven to 300º F.

In a very large mixing bowl, combine all dry ingredients – Rolled Oats through Ground Flax Seed; mix well.

In a small saucepan over medium heat, combine remaining ingredients – Water through Vanilla Extract; mix well with a small whisk.

Heat until hot, but do not boil.

When hot, pour syrup over dry ingredients and stir to combine thoroughly.

Spread Granola on a jelly roll pan or other large cookie sheet-type pan with sides.

Bake at 300º for 40 – 45 minutes total, stirring every 15 minutes. Let cool. Store in an airtight container for up to six months.

*You may add dried fruit, if desired, after the baking process.

I also added 1 cup peanut butter (mix with the oatmeal with hands) and raisins and dried peaches. This is very good, and I’m definitely keeping this recipe! I like that it makes a lot of little chunky pieces.

I used quick oats +1 c. and 1 c. chopped pecans cause that’s all I had… I added about 1 1/2 c. plain corn flake slightly smashed … I didn’t have molasses so I added 2 Tb. brown sugar … lot’s of improvising… super yummy though and crunchy just like I wanted!!!
