Don’t bother marinating with this deliciously simple recipe for Thai Green Curry Skewers. Just throw your ingredients together while you’re heating your coals and prepare to be wowed.
While you are preparing all of your ingredients, place the bamboo skewers in water to soak.
Mix all ingredients (except meat) in a large bowl. Once your paste is thoroughly mixed, add the meat and stir to coat.
Skewer the meat leaving enough room on the skewer so that you have a handle. To ensure even cooking, avoid cramming the meat onto the skewers.
Grill over glowing hardwood coals, turning frequently until fully cooked and caramelized, approximately 10-15 minutes, depending on the thickness of your meat.
Serve with rice, greens and My Go-to Thai Sauce for extra points.
