Description

A low-calorie meatball dipped in a homemade spicy mango glaze.

Ingredients

  • FOR THE MEATBALLS:
  • ½ cups Onion, Diced Small
  • 2 cloves Garlic, Minced
  • ½ cups Panko Breadcrumbs
  • ½ cups Grated Parmesan
  • ½ pounds Lean Ground Beef
  • ½ pounds Lean Ground Pork
  • 1-½ teaspoon Crushed Red Pepper Flakes
  • 1 teaspoon Hot Sauce
  • ½ teaspoons Salt
  • ½ teaspoons Ground Pepper
  • FOR THE GLAZE:
  • 1-¼ cup Mango, Peeled And Cubed (you Can Use Frozen Too)
  • ½ whole Jalapeño, Seeded, Diced
  • 2 cloves Garlic
  • ½ cups Water
  • ½ cups Orange Juice
  • ¼ cups Honey

Preparation

Preheat oven to 400°F. Line a large rimmed cookie sheet with parchment paper or greased foil. Set aside.

In a large bowl, add onion, garlic, breadcrumbs, Parmesan, ground beef, ground pork, crushed peppers, hot sauce, salt and pepper. Mix until well combined. (I used my clean hands to mix it.)

Roll meat into 1″ balls and place onto prepared baking sheet. (I used a small cookie scoop to make evenly sized meatballs.)

Bake in oven for 15-20 minutes until golden in color and the meat is cooked through.

Meanwhile add glaze ingredients into a blender or food processor. Process until smooth and well combined. Add the mango sauce into a medium saucepan and cook on medium-low heat until thick, about 5 minutes.

Remove meatballs from oven. Serve on a platter. Place a toothpick into meatballs and dip into mango glaze. For an extra boost of flavor, add a little bit of the mango sauce to your platter.
