I love this recipe because the ingredients complement one another so nicely. The combination of corn with coconut milk is awesome!
In 2-3 large plastic bags add your ears of corn on the cob. In a medium mixing bowl, add coconut milk, chile powder, coriander, cumin, salt, white pepper, and melted butter. Mix well and pour evenly over the corn in the bags. Allow to marinate for at least 1 hour, occasionally turning the bag to coat the corn. (I sometimes make this up the night before and put it into the refrigerator.)
Turn on outdoor grill to medium heat, remove the corn from the bags, and wrap in foil. Grill 5-7 minutes in the foil. Remove from the foil and place directly on the grill for another 3-5 minutes. Serve hot!

Glad you liked it! I sometimes use Jamaican jerk seasoning instead too. There are lot’s of ways you could prepare this recipe it’s pretty versatile. Thanks for giving it a try!

This really was a tasty recipe. The corn was sweet. Next time I think I would add more of the spices.
