Description

Sweet mini peppers stuffed with goat cheese, sage and maple syrup—so sweet and tangy!

Ingredients

  • 8 whole Mini Sweet Peppers, Assorted Colors
  • 4 ounces, weight Goat Cheese Crumbles
  • 4 ounces, weight Cream Cheese, Softened
  • 1 teaspoon Black Pepper
  • 1 Tablespoon Fresh Sage, Minced
  • 2 Tablespoons Maple Syrup
  • 2 teaspoons Minced Garlic
  • Optional For Garnish: Dried Sage Or Fresh If You Prefer

Preparation

Preheat your oven to 300 F.

Wash, cut in half lengthwise and clean out the insides of the peppers. Put them cut side up on a rimmed baking sheet. Set aside.

Add goat cheese, cream cheese, black pepper, sage, maple syrup and garlic into a a medium-sized microwave-safe bowl. Microwave for about a minute and mix well.

Spoon the filling into the pepper halves. Put baking sheet into the oven and bake for 20 minutes.

Garnish with additional sage if you would like. I used dried sage on top.

These are easy and quick – and delicious – folks at my Book Club loved them! One change I made was to add only 1/2 the maple syrup – just didn’t want them to be too sweet – wonderful! Thanks Raquel! R
