This stuff is amazing. It has a sweet caramel sauce with a nice amount of heat and is a must for Christmas!
Preheat oven to 250 F and line a rimmed baking sheet with parchment paper. Melt butter in a saucepan over medium heat. Stir in brown sugar, corn syrup and salt. Bring to a boil and let the mixture boil for 4 minutes. Remove from heat and add the Sriracha, vanilla and baking soda.
In a large bowl combine the popped popcorn and caramel sauce until evenly coated. Spread popcorn over the baking sheet and place in the oven for 45 minutes. Give the popcorn a good stir every 15 minutes. Then remove it from the oven, let it cool and enjoy!
