A delicious way to serve radishes—simple and quick to assemble.
Set butter out to soften.
Put the slices of bread on a baking sheet and turn on your broiler. Put the pan into the oven and toast the bread. Remove it from the oven and allow to cool completely.
Wash radishes, chop off top and bottom. Slice them thinly and lay them on a platter in a single layer, sprinkling them lightly with salt.
Chop the scallions and parsley. In a medium-sized bowl mix together the (softened) butter, scallions and parsley. Add salt and pepper to taste.
Spread toast slices with the butter/herb mixture, and top with a layer of radishes.
