Description

Okay, so I made up the name. Okay, so it’s weird. But this yummy, cold dip—packed with shrimp, avocado, cilantro, and other delights—is delicious. Serve with tortilla chips or spoon over grilled fish or chicken. Yummy!

Ingredients

  • 1 pound Cooked Shrimp (tails Removed), Chopped
  • ½ whole Red Onion, Diced Finely
  • ½ cups Green Or Black Olives, Chopped
  • 2 whole Tomatoes, Diced
  • 2 whole Fresh Jalapeno Peppers, Minced
  • 2 whole Avocados, Chopped
  • 2 whole Limes, Juiced
  • Kosher Salt To Taste
  • 2 cups Cilantro, Chopped

Preparation

Combine shrimp, red onion, olives, tomatoes, and jalapenos in a large bowl. Add lime juice to taste, then a dash of kosher salt. Add cilantro. Stir gently with a spoon, then taste on a tortilla chip so you’ll have an accurate gauge of the salt content. Add more salt and/or lemon juice if needed.

Chill until serving. Note that the avocado will brown if too much time passes, so if you want to make this ahead of time, leave out the avocado until just before serving.

Serve with tortilla chips!

I made this today and all the ingredients were okay, but it like something was missing. I added Texas Pete to it and it helped some, but I love spice, so I think I will also add some cumin and some fire roasted tomatoes for a kick next time. Yes, I will make this again.

I made enough changes to this that I didn’t think it was fair to give a rating, but I did want to leave a comment. I was in charge of the appetizers/dips for our Super Bowl party tonight, and we’re doing a Mexican theme (as I’m sure many are across the US today). I made Guacamole, Ceviche, and this. Since I used avocado already in the guac, I didn’t want to put it in this. After I made it as written, but without the avocado, I went back and added about 4 more limes (they weren’t very juicy at all) and a half a lemon. It was still missing something, so I added the rest of the can of olives, a can of black beans, and some cumin. I’m sure this is a dish that will just get better as it sits, too. It’s definitely tasty right now, even though I only made it an few hours ago.

Was a hit for New Year’s Eve party. I sprinkled some cumin over for some extra flavor. I chopped the avocado one at a time into a large measuring cup and squeezed the lime juice directly onto it and tossed gently before adding to salad. Avocado didn’t turn brown!

Eating this as I type! Yum! It’s been so hot this week, that something light and cool for lunch sounded great. I used frozen salad shrimp and instead of olives, I added a clove of minced garlic.

I made this for the Super Bowl this year, and it went over well. I would probably make it again. I agree with the first reviewer- using frozen cooked shrimp might not have had the most flavor. And to get tomatoes at the store in February, well… not an advantage there, either. However, I thought the flavor was bright and crisp, and I enjoyed it. I think starting with juice of one lime might do the trick- otherwise it seemed to get too watery. I’ve been enjoying leftovers all week- this yields a bunch.

Eating this right now. Its really yummy. It has a great fresh flavor and we can taste each ingredient! Went light on the jalapano, well, just enough for me I should say.

I made this yesterday as a sample for Super Bowl fare. Tried by 3 and all said it was just s0-so. They would eat it if it were made, but would not request it again.

For ease, I used frozen/cooked shrimp from the store and I think they had zero seafood flavor.

I keep 20-30 pounds of fresh Gulf shrimp in the freezer so I’m going to try again next time we have a shrimp boil and see if well seasoned shrimp make a difference.

Anxious to see other reviews….Thanks for the recipe PW.
