A traditional hummus, but raw garlic is replaced with sweet roasted garlic cloves.
Cut off the top of the head of garlic. Wrap in foil with salt and a drizzle of oil. Roast at 350 degrees for 1 hour.
Put all ingredients in a food processor and blend until smooth. You can adjust the garlic amount by adding a couple cloves at a time and then tasting. Once blended, taste and season accordingly. Serve with toasted pita chips, sliced cucumbers, or with a spoon and a smile.
