Description

This crunchy, sweet pumpkin granola with dried cranberries and nuts is awesome with vanilla yogurt, ice cream, as a snack, or added to your morning cereal.

Ingredients

  • ¼ cups Brown Sugar
  • ⅓ cups Maple Syrup
  • ⅓ cups Oil
  • 1 teaspoon Vanilla
  • 2 teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Ground Ginger
  • ¼ teaspoons Allspice
  • ½ teaspoons Salt
  • 1 cup Pumpkin Puree
  • 5 cups Rolled Oats
  • ¼ cups Pumpkin Seeds
  • ¼ cups Sunflower Seeds
  • ⅔ cups Chopped Nuts (walnuts, Pecans, Almonds)
  • ½ cups Dried Cranberries

Preparation

Preheat oven to 300ºF. In a large bowl, whisk together brown sugar, maple syrup, oil, vanilla, cinnamon, nutmeg, ground ginger, allspice, and salt. Stir in the pumpkin puree. Then stir in the oats, seeds, and nuts.

Spread out in an even layer on a baking sheet. Bake for 90 minutes to 2 hours, stirring occasionally. Let cool completely and stir in the dried cranberries.

Store in an airtight container in a cool dry place for up to 2 weeks.

Mary, the sunflower hearts are what you want…they are in the center of those little seeds you feed the birds! The birds crack them open and eat the hearts. You can buy them already hulled for baking and eating

Hi! I have a question about sunflower seeds. I see them wrapped up in stores and they look like what I feed the birds and squirrels. Are you supposed to crack them and eat what is inside or as they are eating the entire thing? I’ve never bought any as I was unsure what to do. I desperately need a tutorial!

I have a question I’ve never known anyone to ask before about sunflower seeds. Are you talking about the seeds that look like bird food? I see them at stores, but don’t know how one is to eat them? Are you supposed to eat the whole shell or do you bite them and get something from the inside to eat? If so, do you crush them or whatever and then put them in the granola?
