Description

This is a salsa-like dip good with Fritos Scoops, or a salad-like accompaniment to virtually all grilled meats. It is loaded with protein and “good for you” ingredients – you almost don’t feel guilty eating it all by yourself – but since it makes a lot, you might consider saving some for the next day.

Ingredients

  • 1 cup White Vinegar
  • 1 cup White Sugar Or Splenda (or 1/2 Each)
  • ¾ cups Olive Oil (mild)
  • 1 whole Vidalia Onion, Chopped Fine - Or Other Sweet Variety Onion
  • 2 cans Rotel Original Diced Tomatoes & Green Chiles, Drained
  • 1 can White Whole Kernel Corn, Drained
  • 1 can Pinto Beans, Rinsed Well And Drained
  • 1 can Black Beans, Rinsed Well And Drained
  • ½ cups Black Olives, Chopped (1 Small Can)

Preparation

Combine vinegar, sugar and olive oil in small sauce pan.

Bring to a boil, stirring often, then remove from heat and let cool.

Combine remaining ingredients with cooled sauce and let marinade in the refrigerator several hours or overnight.

The longer it has to “marry” – the better it will be. This is addictive and pretty healthy, especially if you don’t eat the whole batch!

Serve as a dip (with Fritos Scoops) or it is also great with grilled meats and fish. Our favorite is to add it on top of grilled chicken in sandwiches. This does not need to be kept cold so it is perfect for summertime BBQ’s.
