Description

Delicious nut brittle with a kick!

Ingredients

  • 1 Tablespoon Butter
  • ½ cups Chopped Jalapenos
  • 1-½ cup Shelled Pecans
  • 1 cup Sugar
  • ½ cups Corn Syrup
  • ⅛ teaspoons Salt
  • 1 teaspoon Almond Flavoring
  • 1 teaspoon Baking Soda

Preparation

Melt butter in an iron skillet. Toss in peppers and cook just until soft. Meanwhile, in a microwavable bowl, combine nuts, sugar, syrup and salt; cook on high 4 minutes. Remove carefully and stir; add peppers and microwave on high for 4 more minutes. Remove bowl from microwave and stir again; add almond flavoring and cook for an additional 2 minutes. Add soda and pour immediately into a greased cookie sheet. Spread out into a thin layer. Let the mixture cool and then twist pan to break into pieces. Enjoy!

I make microwave brittle on a regular basis and it turns out beautifully. I tried this recipe 4 times and it never hardens. Always gooey. Any suggestions?

Ok, This is AWESOME!! I just made this and OMG!! Fabulous…..The sweet and heat together is perfect….the only thing I did different was cook mine on the stovetop instead of the microwave. Give this a try you will love it!!
