Description

Peanut butter granola bites filled with all the flavors of s’mores!

Ingredients

  • 1-½ cup Quick Oats
  • ¼ cups Whole Wheat Flour
  • ⅔ cups Crushed Graham Crackers
  • ½ teaspoons Salt
  • ½ cups No-stir Natural Peanut Butter
  • ½ cups Honey
  • ¼ cups Marshmallow Bits
  • ¼ cups Chocolate Chips

Preparation

1. In a large bowl, stir together oats, wheat flour, crushed graham crackers, and salt. Add in peanut butter and honey and stir until well-combined.
2. Stir in marshmallow bits and chocolate chips.
3. If dough is sticky, refrigerate for 15 minutes to allow to firm up before forming into 1-inch balls.
4. Store leftovers in the refrigerator.

Five mitts because these were so EASY to make, and they’re a yummy little treat! Great for lunch boxes. It took me and my 9-year old less than 15 minutes to make these, and he was thrilled that he didn’t have to wait for them to bake and cool before eating, but I do think they taste better after chilling for awhile.
You definitely need to use marshmallow bits – I only had mini-marshmallows so I used those instead of the bits, but they weren’t the right texture and didn’t provide enough marshmallow flavor.
