Don’t buy that expensive jar of tahini! Peanut butter is a spectacularly yummy (and affordable) substitute.
Add beans, peanut butter, salt, cumin, lemon juice, and garlic into a food processor. Pulse until finely ground. Scrape down the sides of the bowl.
With the motor running, slowly pour in the 2 Tablespoons of extra virgin olive oil and 2 Tablespoons of the reserved bean liquid. Pulse until smooth. Add a bit more bean liquid if the hummus is too thick.
Pour the mixture into your serving dish. Sprinkle with a dusting of paprika. Enjoy with some pita bread and store the rest in the fridge for up to a week.

I can’t wait to try Peanut Butter hummus! I have been dying to try a roasted red pepper hummus, but here in the boonies I can’t find tahini anywhere. Thanks!
