These no-bake granola bars are full of bananas, peanut butter and chocolate! Kid-friendly and gluten-free!
In a microwaveable medium sized bowl or saucepan melt the first three ingredients using low heat and stir well. When melted, remove it from the heat. Add in the mashed banana and cocoa powder and blend well. When mixture is combined add oats and stir until oats are coated.
Line an 8×8 pan with aluminum foil and spray foil with cooking oil. Spread mixture into pan—it will be very thick. Top with peanuts and chocolate chips* then place dish in the freezer for 10-15 minutes until well set. Then remove dish from the foil, invert the bars out of the pan, peel foil off and cut into bars. Store in fridge.
*Alternatively, you can microwave the chocolate chips 30 seconds at a time until melted and drizzle over the bars.
