Description

A delicious batch of nachos using a queso made from whole ingredients.

Ingredients

  • 2 Tablespoons Butter
  • 3 Tablespoons Flour
  • 1 cup Milk
  • 5-½ cups Shredded Cheese (I Used Pepper Jack)
  • 1 can (4 Oz. Can) Green Chiles
  • ½ teaspoons Chili Powder
  • ½ teaspoons Cumin
  • 1 bunch (small Bunch) Cilantro
  • ½ cups Salsa
  • 1 bag (about 13 Oz. Bag) Tortilla Chips, To Serve
  • Assorted Toppings (I Used Chicken, Tomatoes, Green Onions, Black Beans, Avocado)

Preparation

To get started, grab a pan and melt up your butter. Add in the flour and create a roux. Then add in your milk, put the heat on medium and let the mixture thicken.

Turn the heat down to low and add in the cheese.

Once it’s melted, add in your green chiles, chili powder, cumin, and cilantro. Now add in the salsa.

Lay your chips in an ovenproof bowl and pour the cheese over the top. Now add on your desired toppings.

Throw them in the oven for about 10 minutes at 350 degrees.

I just made this for dinner. Yum! I used mostly mild cheddar, some Mexican blend, and about 4 oz. of Pepper Jack cheeses and we topped it with refried black beans, cilantro, olives, avocado and sour cream. I used a few spoonfuls of green chili salsa rather than a can of green chilies. And I didn’t add cilantro to the cheese mix, just used it as a topping so those of us (ie: my kids) who don’t like green stuff, didn’t have to eat it.

My only complaint is that it was more like a giant blob/glob of cheese instead of runny, nacho cheese. But it was still delicious.
