Microwave Popcorn Caramel Corn

Description

My mom has been making this quick and easy caramel corn for years and it never sticks around for long!

Ingredients

  • 2 bags (about 3 Oz. Bag) Butter Popcorn (I Use Orville's)
  • 1 stick Butter Or Margarine
  • 1 cup Brown Sugar
  • ¼ cups Light Corn Syrup
  • 1 teaspoon Baking Soda
  • ½ teaspoons Vanilla (optional)

Preparation

Pop the two bags of popcorn and place in a microwave-safe bowl. I wouldn’t use a glass one as it can burn the popcorn. I’ve also seen this done in a paper bag as well.

In a sauce pan, stirring frequently, bring the margarine, brown sugar, and corn syrup to a full boil for 5 minutes. Remove from heat.

Stir the baking soda into the mixture. It will be come foamy.

Pour over the popcorn and mix. (If in a paper bag, shake vigorously.)

Place the container in the microwave on full power for 1 1/2 minutes. Stir (shake), making sure that you are getting the bottom, especially from the center of the bowl.

Place back in the microwave for thirty seconds and stir or shake again.

Repeat for 30 more seconds.

Spread the caramel corn onto a cookie sheet or waxed paper to let cool, then break up and enjoy!

As an FYI I just tried this weekend using 1/2 teaspoon vanilla as well for some extra flavor and it turned out great as well. My friend likes to throw in some chocolate too during the last couple of trips to the mircowave

This was a great recipe and so easy to make with what was in the house. I made popcorn in our stovetop popper instead of microwave and also added some mini morsels at the end – yum! Also added a little bit of sea salt to half of the batch and I think it was the best of the bunch. Will definitely be making this again!
