Description

A super simple, use what you have in the fridge, kind of snack.

Ingredients

  • 1 bunch Kale, Washed, Dried With Tough Stems Removed
  • 1 clove Garlic, Peeled
  • 3 whole Green Onions
  • ¼ cups Toasted Soy Nuts
  • Salt To Taste
  • Olive Oil As Needed To Reach Desired Consistency
  • 1 dash Lemon Juice
  • Toast, For Serving

Preparation

In the large bowl of a food processor add kale, garlic, green onions, nuts and salt. Process to combine. Slowly drizzle in the oil until pesto comes together. Add just enough oil to get the consistency you like. I prefer a chunkier pesto for this application as it says on the toast better. Finish pesto with a squeeze of lemon.

Toast a ciabatta bun, or whatever bread suits your fancy. Spread a generous topping of kale pesto over the top. Add a piece of sharp cheddar if you like, and place it under the broiler in your oven to quickly melt. Remove from oven and enjoy while warm.
