Description

An easy dip that tastes like a fried jalapeno popper.

Ingredients

  • 16 ounces, weight Neufchatel, Softened
  • 1-½ cup Jarred Diced Jalapeno Peppers
  • 1-½ cup Reduced-fat Sharp Cheddar Cheese, Shredded
  • Salt And Pepper, to taste
  • ½ cups Panko Bread Crumbs
  • 1 whole Large Fresh Jalapeno, Chopped
  • Crackers Or Chips, To Serve

Preparation

Preheat oven to 400ºF.

In a medium-sized bowl, combine cream cheese, jarred jalapenos, cheddar, a little bit of salt and pepper and stir until mixed.

Spread the mixture into a 9-inch pie pan. Sprinkle the panko bread crumbs on top of the cream cheese mixture. Spray the bread crumbs lightly with cooking spray. Top the bread crumbs with fresh jalapenos.

Bake in the preheated oven for 40 minutes or until the bread crumbs are golden brown and the fresh peppers are roasted. Serve with crackers or chips.

I just made this for the OSU game today…it was delicious and HOT! I did change it a bit. I added more cheddar cheese (1/4 c), a little more jalapenos with the seasoned onions and carrots that come in the can (I did this b/c I needed to finish them off), then I added between 1 1/2 and 2 cups of chicken that I pulled from a roasted chicken which I threw in my food processor to dice up (that was a leftover I wanted out of my fridge as well). I added all the rest of the ingredients back in the the processor to mix, poured it into a casserole dish and baked it. So yummy!! Hottest dip I have ever had but sooo addicting! Thanks!
