These are a titch spicy … and sweet and tart and crunchy all in one bite. Yum!
In a large bowl, whisk together everything except the cucumbers and onion until sugar is dissolved. Add onion and cucumber. Seal up the bowl for several hours or overnight.
Store your pickles in an airtight container in the refrigerator to keep them crisp. They are incredible with BBQ or on a sandwich. Oh yeah, momma!
Note: If you slice your cucumbers up and put them in the refrigerator for a couple days (in a Ziplock baggie) before dunking them in the brine, they will stay crisper for you! So do this if you can.
