Ok, so take that title with a grain of salt. It’s LOWER fat, but not low-fat.
If your thighs know what I mean.
Mix together the spinach, cream cheese, sour cream, jack cheese, garlic, artichokes, pepper and salt and spread in a greased baking dish, something approximately the size of an 8″ or 9″ cake pan. (I like to bake this in glass or ceramic. A glass pie dish would work well, too.)
Top off with the mozzarella and parmesan.
Bake at 350F for about 30 minutes, till the edges are golden and the middle is bubbly.
I like to serve this with slices of baguette that have been drizzled with a fine olive oil and toasted under the broiler for a couple minutes. Enjoy!

This worked out super well! Actually, maybe I shouldn’t say that; I didn’t have quite as much spinach as called for (5 ounces) and I had only 7 1/2 ounces of artichokes, but I was really pleased anyway. When I’ve made other recipes, they have separated and gotten watery, despite using regular cream cheese, but this didn’t, even with the lower fat cream cheese. I think it would only be better if you used all the spinach and artichokes called for. Loved it.

We made this yesterday for the Superbowl and it was a huge hit! It comes out just like you get in the restaurants. My only suggestion is to divide it into two smaller baking dishes so that you can stagger them and always have hot, bubbly dip!

I made this last night and it was so good! I ate way too much of it! I think my love handles have doubled in size

That sounds wonderful! I’m off to see if I have all the ingredients to whip some up right now!
