Description

These homemade soft pretzels are as good (in my humble opinion) as Auntie Anne’s pretzels. Not as greasy (though you can add more butter according to each person’s preference) and super easy to make. It’s your basic bread prep method plus a few extra steps like shaping your dough into pretzels and dipping them into a baking soda/water mixture. Then just bake them as you would bread.

Ingredients

  • 4 teaspoons Yeast
  • 1 teaspoon Sugar
  • 1-½ cup Warm Water
  • 5 cups Flour
  • ½ cups Sugar
  • 1-½ teaspoon Salt
  • 1 Tablespoon Olive Oil
  • ¼ cups Baking Soda
  • 2 cups Hot Water
  • 1 pinch Sea Salt
  • 2 Tablespoons Butter

Preparation

In a small bowl, mix together the yeast and the first amount of sugar. Add the warm water. Allow mixture to stand for 5-10 minutes until foamy.

In a large bowl, combine flour, second amount of sugar and the first amount of salt. Add oil and combine. Add the yeast mixture and use a stand mixer to thoroughly mix dough together. Add an extra 1-2 tablespoons of water if needed. Knead for about 5-7 minutes. Form into a ball and lightly oil the ball. Place dough ball in a large bowl and place a towel over the top. Allow dough to rest in a warm area until doubled in size, about 1-2 hours.

In a medium bowl, mix baking soda and hot water together. Preheat oven to 450 F.

Once dough has doubled in size, form it into a log shape. See related blog post for step-by-step photos. Cut log into 12 equal pieces. Roll each piece into a long snake and then form into a pretzel shape. Dip pretzels in the baking soda/water mixture and place on a greased baking sheet (6 pretzels per sheet). Sprinkle with sea salt.

Bake in the heated oven for 8 minutes or until lightly browned. Remove from oven and brush with melted butter.

These are “out of this world” good! I made six with salt and six with cinnamon and sugar – both were excellent!! I do need to work on my shaping of the dough into pretzel shapes – my daughter declared they were “obese pretzels”!!! I always say there is a learning curve with most yeast based baking and for this recipe that would be the shape!

These were fantastic!! Everyone in the house loved them and was so easy to make!! I made two batches of dough one for pretzels and one to make pretzel rolls for hamburgers, both the pretzels and rolls turned out great!! This recipe is a keeper!!
