Homemade Chocolate Chip Cookie Dough Larabars

Description

Make these naturally-sweetened fruit and nut bars at home! Much cheaper and tastier than store-bought!

Ingredients

  • 2 cups Raw Cashew Pieces
  • 12 whole Medjool Dates, Pitted
  • ½ teaspoons Vanilla Extract
  • 1 pinch Sea Salt
  • ¼ cups Mini Dark Chocolate Chips

Preparation

Line a small rimmed baking sheet with plastic wrap (I used a quarter sheet pan). Set aside.

Grind the cashews in the food processor until it resembles coarse sand. Transfer cashews to a medium mixing bowl. Tear the dates in half and add them to the food processor. Pulse until dates are mostly chopped. Add in the ground cashews and pulse until mostly combined.

Dump the mixture back into the bowl and add the vanilla and salt. Mix with your hands for about a minute until the mixture is well-combined and it clumps together when you pinch it. Mix in the chocolate chips and spread the “dough” out on the prepared baking sheet.

Use a rolling pin, a can, or a bottle to smooth out the top. Roll until you reach the desired thickness, then cut them up using a pizza or pastry cutter. Separate them and store in an airtight container at room temperature.

These were great but didn’t stick together as well as others I’ve tried. Next time I will add more dates and maybe a little more vanilla to try and prevent crumbling….also I want to try grinding up the chocolate chips with this recipe too…get a little chocolate in every bite that way! Will definitely be adding to my recipe book.
