Description

Roasting chickpeas until crispy yields a great anytime snack!

Ingredients

  • 2 cups Chickpeas, Drained And Rinsed
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Herbes De Provence
  • Sea Salt, to taste

Preparation

Preheat the oven to 400 degrees. Toss together the chickpeas, herbs, olive oil, and salt. Spread out on a single layer on a foil-lined baking sheet. Roast for up to an hour, shaking the pan every 20 minutes. Adjust seasonings. Store in an airtight container for up to a week.

Be creative here. I used herbes de provence, but anything in your spice cabinet will work. Try Cajun, Mexican and Italian spice blends to change up the flavor!

These came out so great! I may have overcooked them just slightly, but they are still yummy (and addictive!) I seasoned mine with Cajun seasoning. Such an easy snack!

I used canned chickpeas and only seasoned with ground sea salt and black pepper. They only needed 40 minutes in my oven (at 356F on the fan-forced setting) so I recommend checking for how dried out they are at about the half an hour mark to gauge how long you need to cook them for.

Thanks for the great recipe, it satisfies the crunchy snack cravings and it’s healthy too!

For this batch I cooked up a bag of dry chickpeas (according to the package directions.) It works with canned too though!

Great crunchy snack, like I said in the comments, check if they’re done around the 40 minute mark as it may vary with your oven. They should be crunchy all the way through.
