Lighter, baked onion rings that are just as tasty and crispy as the fried version. Perfect for parties!
Preheat the oven to 200°C (Gas Mark 6 / 400°F).
Peel the onion and chop into thin slices. Separate each slice into its individual rings.
In a bowl, lightly beat the egg. In a separate bowl, combine the breadcrumbs, parmesan and herbs, and season with salt and a lot of black pepper.
Dip each ring of onion in the egg, and then into the breadcrumb mixture. Lay on a lightly greased baking tray and bake for 30 minutes, turning halfway.
