Description

Delicious nachos made with ground turkey, homemade taco seasoning, and salsa.

Ingredients

  • FOR THE SALSA:
  • 3 whole Roma Tomatoes, Chopped
  • ½ cups Sliced Green Onions
  • 2 whole Medium Garlic Cloves, Grated
  • ¾ teaspoons Kosher Salt
  • 3 Tablespoons Canned Mild Green Chiles
  • 1 pinch Unrefined Sugar
  • FOR THE TURKEY:
  • 2 Tablespoons Butter
  • 1 whole Small Onion, Diced
  • 2 Tablespoons Dried, Minced Onions
  • 1 pound Dark Meat Ground Turkey
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Fresh Cracked Pepper
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 2 Tablespoons Taco Seasoning
  • ¼ cups Water
  • 15 ounces, weight Canned Pinto Beans Rinsed And Drained
  • 1 cup Shredded Extra-sharp White Cheddar
  • 1 cup Shredded Smoked Sharp White Cheddar
  • FOR THE NACHOS:
  • 12 ounces, weight Tortilla Chips
  • Sour Cream, To Serve

Preparation

For the salsa:
Add all ingredients to a medium bowl and stir to combine. Cover and refrigerate until ready to use.

For the turkey mixture:
In a 5-quart enameled Dutch oven, melt butter over medium heat. Add diced and dried minced onions and saute until soft, about 5 minutes.

Add ground turkey and seasonings to onions and cook until meat is no longer pink, breaking up chunks of meat as needed. Drain meat and return to pan. Add taco seasonings and water to moisten meat; stir to combine. Add pinto beans to meat mixture and cook to warm up beans, about 5 minutes.

Top meat mixture with both cheeses and place a lid on the Dutch oven. Allow meat to sit for 5 minutes to melt the cheeses.

To assemble the nachos, put some tortilla chips on a plate and top with meat, salsa, and sour cream.
