Quick, easy and most importantly, delicious and nutritious! Fresh salsa, no canning involved!
Step 1: Cut the tomatoes in half and scoop out the seeds; discard the seeds. Dice the tomatoes and place in a bowl.
Step 2: Next, add the minced onion, diced bell pepper, finely minced garlic and jalapeno. Roughly chop the cilantro and add to the bowl. Season with a pinch of salt and add 1 teaspoon of cumin and juice of 1 lime. Taste test. May need more cumin and lime, depending on how you like your salsa.
Serve with nachos!
