Description

These little toasts are super simple and they are the perfect finger food!

Ingredients

  • 1 loaf Baguette, Cut Into 1/2 Inch Slices
  • ¼ cups Olive Oil
  • ½ teaspoons Sea Salt
  • 5 strips Bacon, Fully Cooked And Diced
  • 1 cup Swiss Cheese, Grated
  • 1 cup Pepper Jack Cheese, Grated
  • ½ teaspoons Black Pepper
  • ½ teaspoons Chili Powder
  • ¼ cups Mayonnaise (use More As Needed)
  • 2 Tablespoons Green Onions, Sliced, For Garnish

Preparation

Line a large baking sheet with parchment paper and preheat the oven to 375 F.

Lay out your baguette slices on the baking sheet, brush each one with olive oil and sprinkle with salt. Bake at 375 F for 3-4 minutes or until they begin to brown slightly. Remove from oven and set aside.

In a bowl, combine the bacon, cheeses, black pepper, chili powder and mayonnaise. Stir until combined. If you find the mixture isn’t holding together, add more mayo until it does.

Onto each toasted crostini, dollop a teaspoon of cheese mixture. Then add additional until you have used it all. Pop the toasts back in the oven and cook for 3-4 minutes more, or until the cheese is melted and bubbly. Remove from oven and garnish with green onions. Serve immediately and enjoy!
