Description

Super easy refrigerator sweet pickles. Perfect for using up all the fresh cucumbers from your garden. Even if you have never canned before, you can do this! It is very easy and very tasty.

Ingredients

  • 6 cups Thinly Sliced Cucumbers
  • 2 cups Thinly Sliced Onions
  • 1-½ cup Sugar
  • 1-½ cup White Vinegar
  • ½ teaspoons Sea Salt
  • ½ teaspoons Mustard Seed
  • ½ Tablespoons Celery Seed
  • ½ teaspoons Ground Turmeric
  • ¾ teaspoons Minced Garlic
  • Crushed Red Pepper (optional)

Preparation

In 2 glass quart jars alternate layers of sliced cucumbers and onions.

Add minced garlic to each jar, if using crushed red pepper, add also.

In a medium saucepan combine sugar, vinegar, salt, mustard seed, celery seed and ground turmeric. Bring to a boil, stirring just till sugar is dissolved.

Pour vinegar mixture on top of cucumbers/onion mixture, cool slightly.

Cover tightly, shaking jar to incorporate the mixture, and refrigerate for at least 24 hours before serving. Store up to 6 months in refrigerator.

I was glad to find this recipe as I was looking for a pickle recipe that didn’t involve canning skills. I made them yesterday and tried one today. It was delicious! I’m sure in a week or two they’ll be even better.
