Description

I remember making these as a little girl, in my parents VINTAGE microwave oven (circa 1973). I was 6 and the dinner party crowd would gobble these up as fast as I could pass them out (in my Lanz nightgown). It became a standard at every type of dinner party and our heavy appetizer Christmas eve celebration. Did I mention how easy they were?

Ingredients

  • 1 box (about 5 Oz.) Melba Toast, Any Flavor
  • 1 cup Cheddar Cheese, Grated
  • ½ cups Mayonnaise (not Miracle Whip!)
  • 3 whole Green Onions, Chopped

Preparation

Combine the cheese (I prefer a sharp cheddar), mayo and green onions (chopped, both white and green part).

On a microwave -safe serving tray, arrange the melba toasts around the edge of the tray in a circle (microwaves don’t do a good job of cooking evenly in the center).

Spoon 1 to 2 teaspoons of the cheese mixture onto each melba toast, depending on how generous you want them to be (my mom was notoriously stingy with the cheese!).

Microwave for a minute or two at half power, until the cheese is hot and bubbly, but not burning.

Pass them while hot. Simple and delicious.

Quick & easy, my favorite, I still have my daughters favorite Lanz nightgown, she is 37! It was a flannel, red & white, with a flounce on the bottom and on the cuffs.
