Description

Light and naturally-sweetened mini snacks will provide you with a boost of energy when you need it.

Ingredients

  • 1 cup Medjool Dates, Soaked In Hot Water For 10 Minutes
  • ½ cups Dried Cherries (soaked In Hot Water For 10 Minutes)
  • ⅔ cups Walnuts
  • ¼ cups Chocolate Protein Powder
  • 1 Tablespoon Agave Nectar
  • ½ Tablespoons Vanilla Extract
  • 1 Tablespoon Coconut Oil
  • ½ cups Shredded Coconut

Preparation

Line a baking sheet with parchment paper.

Make sure to soak the dates and cherries as detailed above. This way they will soften and the energy balls will be moist. Once soaked, drain and set aside.

Using a powerful blender, pulse nuts until roughly chopped. Be careful not to turn them into a liquid. Transfer to a bowl.

Process the soaked (and drained) dates and cherries for 1 minute. Combine date cherry mixture with chopped walnuts. Add protein powder, agave nectar, vanilla extract and coconut oil. Mix well and form a ball from the dough.

Using a small ice-cream scoop, scoop out balls from the dough. Then roll them by hand, toss to coat them in the shredded coconut and place on the parchment paper lined tray.

Chill for 10 minutes. Store in an airtight container in the fridge.
