Description

This reminds me of sushi, so I sprinkle it with soy sauce and eat it with chopsticks.

Ingredients

  • 1 cup Sunflower Seeds, Soaked For 6 Hours, Rinsed And Drained
  • 1 stick Celery Finely Chopped
  • ½ teaspoons Garlic, Finely Chopped
  • 1 whole Green Onion, Greens Only, Finely Chopped
  • 1 Tablespoon Parsley, Finely Chopped
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Soy Sauce (unpasteurized Is Best)
  • ½ teaspoons Dill Weed
  • ½ teaspoons Dulse Flakes
  • 2 whole Cucumbers

Preparation

Pulse the drained sunflower seeds in a food processor about 5 times. Scrape down the sides and pulse another 5 times.

Put the processed sunflower seeds in a bowl and mix in the rest of the ingredients (except cucumbers).

Peel two cucumbers, cut off the ends, cut them in half, and cut out the seeds. Stuff them with the mock tuna.

Roll them in a mixture of black and white sesame seeds and cut to your desired thickness.

I just made these for lunch, only I used real tuna since a can of it is cheaper than a bag of sunflower seeds. It was really good, and paired with a bowl of miso soup was surprisingly very filling! I wasn’t able to finish eating. Thank you for the idea, we really enjoyed these!
